I have my Australian learners permit and I will be traveling to new zealand with my partner (who is on an open Australian license).
Am I allowed to drive in NZ with his supervision?
You are permitted to drive in New Zealand in accordance with the conditions of your Australian license. So, if the conditions you suggest apply to the license you hold in Australia (ie, driving with your partner's supervision), then you are permitted to do the same here.
However, if you will be travelling in a Rental vehicle, it is unlikely to be permitted by the Rental Company, as they would most likely require the driver to hold a full license. You would need to check with them.

Does this apply to a motobike learners permit as well?
I have a bike permit issued in Victoria - Can I use this to ride to NZ roads as long as I comply with the learner restrictions?
Australia learners licence needs to be current and valid and you cannot drive on the Australian licence if you have been here more than 12 months from the time you arrived in New Zealand. If you have been granted a NZ licence then you need to drive with the New Zealand licence. In short, yes you can but you need to adhere to the conditions on your learners licence.
