Just wondering if there was any way to access the legislation that governs the issuing of a speeding tickets using radar.
I was in a group of motorcycles that were all fined for exceeding the speed limit at the same speed, yet we were all hundreds of metres apart and travelling at varying speeds.
I would like to read more on this issue, and see if I can defend the infringement I received.

There is no legislation governing speed radar operation, as the relevant legislation only specifies road users responsibilities and restrictions etc. (e.g. speed limits), not how those are enforced. The only regulations on speed enforcement equipment we know of relate to specifications for testing and accuracy of speed cameras.
You would need to contact the police, probably via the Official Information Act, to request information on their operational requirements governing radar use, calibrating etc. You may want to direct your query to the Road Policing Unit at Police National HQ.
If you want to defend the ticket, you should write to the infringement bureau (listed on the ticket) and request proof of the alleged speed relating to your motorbike
