I was driving on an open road and it became gravel so when I tried to slow down, the car slipped and banged into the oncoming car. I've got the disclosure for the charge. There was no road sign advising to slow down or any caution signs saying "gravel road ahead".
What's the best thing to do? (plead guilty or defend)

This could be a bit tricky. The Roadcode says drivers must be alert for changes in road surface. So I think you would need to prove that you had no warning that the road surface was changing and could not see ahead enough in order to safely adjust travelling speed, (road works not advertised ect) in order to have any shot at a protest.
