My 1996 Nissan Bluebird appears to run more efficiently (and gives me more mileage to the dollar) when I use 91 fuel rather than the higher octane fuels. Am I doing a dis-service to the motor by not using 96 or 98 fuel?

Not at all. If the engine does not 'rattle' when placed under load you will be fine.
