If my car is damaged by another customer at a licenced AA repair shop who pays for the damage? The customer's insurance? The repairshop? Or my insurance? Do i still have pay the excess?

If the driver of another vehicle damages your car, it is their responsibility to lodge a claim with their insurer. In the event they are not insured, they should pay for the damage. Under usual circumstances, you should not be out of pocket, so any excess should be payable by the party at fault.
If a dispute should arise, you may need to take the guilty party to the disputes tribunal.
