When buying a second hand vehicle (through TradeMe), legally how much Ruc should there be left on the vehicle, how much Rego, and how old/new should the Warrant of Fitness be ?

With private sales, you can sell or buy a car 'as is where is'. As long as both parties accept the car in the condition it is presented. There is no requirement to have current road users, rego, or wof. Ideally you would want to buy a legal car to drive away, but you pay more for this. Price usually reflects condition.
