What is the best way to pay for a car in New Zealand - Travellers cheques, debit card or cash? Will private sellers accept travellers cheques?

I can't answer for every private seller out there, but cash or a bank cheque is the way most people pay when buying privately.
Travellers cheques would need to be authenticated by the selling party before handing the vehicle over and a credit card is simply not an option in a private sale.
If you are going to buy privately, make sure the vehicle has a Warrant of Fitness not more than 28 days old and carry out a vehicle history report to ensure there is no money owing and the vehicle has not been reported stolen.
I'd also recommend getting a pre-purchase inspection before you commit to buying a vehicle
