I have been looking at purchasing used vehicles for our sales folk, but was wondering if there was any requirement as a good employer, to have vehicles with curtain/side airbags etc

I guess it depends on your companies view of a good employer and the needs of those who will be driving the cars.
The other major component in the equation is the budget you have to spend.
I note you say you are looking at purchasing used vehicles which narrows the field considerably in regards to curtain airbags. They are becoming more and more popular and fitted on base model new vehicles but a lot of used vehicles will not have them fitted or you may have to go a much higher spec level than your budget allows.
Looking for vehicles with the highest crash test rating possible is another way of showing your concern for your staff's safety. The other factor worth considering is a big car versus a small car. If your staff are on the open road a lot then a small car with all the safety features may not be deemed as safe as a bigger vehicle with less safety features.
One thing in your favour is the market situation at the moment. The used car market is struggling, so the chances of getting a good deal are high. I would definitely stick to NZ new, maybe ex lease vehicles are worth a good look.
While curtain and side airbags are desirable, they should not be seen as the total answer.
Advanced driver training courses are another way of showing your concern for your staff.
